We chilli growers are mesmerized by the many magnificent colours of chillies. The variance in their foliage and fruit colours are truly amazing.

Behind the scenes a very complex series of events bring about these amazing colours to various degrees, creating a kaleidoscope of colours. On a cellular level, protein, enzymes and pigments found in the plants are triggered by pH and various other triggers to give us these various degrees and incremental hues of colour.
